Apple Crisp


This is a really simple and delicious Apple Crisp recipe.  Apples are a good source of vitamins, so if you like you can add oatmeal as part of the crust as some people do, then you will get your fiber too. 

My grandparents had some of the finest Apples I ever tasted on their farm, when I was growing up.  Apples of every variety as I can remember, so we found lots of ways to put them in wonderful desserts.

However, the first time I remember Apple Crisp was from my elementary school cafeteria.  I believe the head cooks' name was Mrs. Rocket, and this fits because her Apple Crisp was out of this world. (OK a little corny, but it WAS  really good.) So this is as close as I could get to remembering how good hers was, so here we go:

 

Ingredients:
6 to 8 apples (cooking type)
1 T. brown sugar
1 ½ t. vanilla

Instructions:
Peel apples and slice into baking dish. 
Stir vanilla into the brown sugar and stir into apples.

Crust on top:
1 cup flour
½  c. margarine
½  c.  sugar
½ c. brown sugar

Mix together and scatter over apples. Bake at 350º for 1 hour. Enjoy.
