Broccoli Cornbread
A good friend of mine shared this recipe for Broccoli Cornbread with me recently. I made it for supper for my family and it is ‘to
die for’ as they say. This is such a rich, sweet cornbread with a creamy flavor like I have never tasted in cornbread before.
I tried to make it as muffins but they don't turn out as well because the batter is too heavy with the cottage cheese. So just go ahead
and bake it in a 9" x 13" pan and you will have success.
The Jiffy brand cornbread mix works best with this Broccoli cornbread recipe, because it already has sugar added which adds to the rich flavor
of the cornbread. However, if you want to reduce the sugar, any package instant cornbread mix will suffice.

Ingredients:
1 c. chopped frozen broccoli
2 boxes Jiffy instant cornbread mix
1 c. onion chopped
2/3 c. milk
1 13 oz. pkg. cottage cheese
4 eggs
1/2 c. butter
Instructions:
Melt butter, mix all ingredients until smooth. Bake at 350º for 30 to 40 minutes or until golden brown. You can test doneness by
inserting a wooden pick in center and it comes out clean when done. Fabulous!
