Buttermilk Coconut Pie

I call this is Buttermilk Coconut Pie as that is the best description for this tasty delight.  Some people call this Buttermilk Pie in south Texas and some call it Coconut Pie. 

It is quick and easy to prepare but please follow the instructions exactly on the baking time and you will have one delicious Buttermilk Coconut pie. 

Adding the extra coconut on top gives it a beautiful golden brown finish and presentation is important.


 

 

Ingredients:
1 c. sugar
4 T. flour
3/4 c. butter,melted
5 eggs, beaten
3/4 c. buttermilk
1 t. vanilla
1 can Angel Flake coconut
or 1 c. coconut
Unbaked pie shell

Instructions:
Combine sugar and flour in bowl. Add butter, buttermilk, eggs, vanilla, and 2/3 of coconut. 
Mix well and pour into shell.  Sprinkle with remaining coconut.
Bake at 325º for 1 hour and 5 min.

Impossible No Crust Coconut Pie

Ingredients:
4 eggs
½ c. margarine
1 cup sugar
½ c. flour
¼ t. salt
½ t. baking powder
2 cups milk
1 cup coconut
1 t. vanilla

Instructions:
Mix- pour in buttered pie pan. Bake at 350º for 1 hour.
