Cherry Cheesecake
This Cherry Cheesecake is one of my specialties and it is really different from traditional cheesecake recipes. First off, the filling
is so light and fluffy you want to eat more.
You can also cut the calories by using light cream cheese, light whipped cream and even lite cherry pie filling. Wow, this pecan crust
is so buttery, flaky and delicious, what a treat! See if this cheesecake crust does not remind you of Pecan Shortbread Cookies.
My friends always want me to bring this cherry cheesecake when we have gatherings, sometimes I have to take two so there will be enough to go
around!
Crust:
2 sticks butter or margarine (softened)
1 3/4 c. flour
1 c. chopped nuts (pecans are best)
Cut butter into the flour until crumbly. Add pecans and Blend well.
Place dough in 9” x 13” pan and pat down like a pie crust just covering the bottom of the pan. Make sure you get in spread evenly even if
you have to run up the sides a bit. Doing this will give you a nice crunchy crust. It really reminds me of a shortbread cookie:)
Place in preheated 350º oven for 25 min. or until golden brown. Remove from oven and set aside to cool.
While crust is cooking prepare filling in separate bowl:
Cheesecake Filling:
2- 8 oz. pkgs. cream cheese (softened)
2- 8 oz. cartons whipped topping
3/4 c. sugar
Blend well with mixer, or by hand until creamy...spread evenly over cooled crust.
Cheesecake Topping:
2 -12 oz. cans Cherry Pie Filling (may use other flavors, but cherry is best)
Drop Cherry Pie Filling by large spoonfuls evenly over cream cheese filling. Then smooth out making sure cherries are evenly
distributed. Be careful not to press to hard when spreading topping, or it will spoil the effect. Refrigerate for 4 hours or overnight before
serving.
Another delicious topping for this cheesecake is to use fresh strawberries and a pre-made strawberry glaze. (Usually next to strawberries on
produce isle in grocery.) Remove stems from strawberries and cut in halves. Mix gently in the strawberry glaze. Spread evenly
over cream cheese mixture using the above directions. Fabulous this way too.
