Easy Chicken Enchilada Casserole

As I mentioned before I learned to cook Chicken Enchilada Casserole and other Mexican foods when I lived in Arizona as a teenager. Some of these recipes are authentic as I learned them from folks that had been cooking this way in their family for generations. 

This is a chicken enchilada casserole recipe that I created over a period of time.  I used to make the enchiladas by rolling the mixture inside each corn tortilla. 

You can still make them this way, but I like the casserole because it is quicker for busy Moms, and I think it really tastes better as all the seasonings blend together as the chicken enchilada casserole is baking.

Ingredients:
1 lg. package chicken breast (4)
1 doz. Corn tortillas
2 cups grated cheese (cheddar or Monterey Jack blend pkg.)
2 8 oz. cartons sour cream
2 cans cream of chicken soup
1 can green chili enchilada sauce
1 can chopped green chilies
2 tsp. cumin
1 t. Chipotle pepper seasoning
1 med. onion, chopped
1 clove garlic chopped


Instructions:
Season chicken with salt & pepper and boil with onion and garlic until done. Remove chicken, reserving broth. De-bone chicken and cut into small pieces.

Return chicken pieces to broth and add 8 oz. sour cream, 1 can cream of chicken soup, green chili enchilada sauce, chopped green chilies, and seasonings. Heat just until it comes to a soft boil. Remove from heat and set aside. Taste to see if needs more salt and pepper. 

Cut tortillas into bite-sized pieces. Add the tortillas to the creamy chicken mixture just until blended.  Pour mixture into a 9” x13” baking pan.

In a separate bowl mix together 1 can cream of chicken soup and 8 oz. sour cream until well blended. Spoon sour cream and soup mixture over chicken layer and smooth evenly to form a creamy layer. Place grated cheese over top to form a final layer.

Bake at 375°for 20- 25 min., or until cheese melted.
Wait until cooled to slice into squares for serving, or use a large spoon to serve as casserole.

Serve with Spanish rice and Guacamole salad as side dishes.
