Coconut Pound Cake
If you love coconut, this Coconut Pound Cake is a light and fluffy dream to eat. It's a very simple cake recipe to make and is a
great cake for beginners to try. The Coconut Frosting recipe that follows will have you making your own from scratch which will give you
some confidence to try others. Really easy and delicious. This calls for a tube pan, so check your pantry for the right equipment
before starting.
Ingredients: 2 c. flour
2 c. sugar
1 c. butter
1 c. flaked coconut
5 eggs
1 tsp. vanilla
1 tsp. lemon
Just remember to collect all of your ingredients together before you get started and have the right cake pans on hand.
Instructions:
Cream sugar and butter. Add beaten eggs and extracts.
Add flour and coconut. Bake in tube pan -- 1 hr. at 350 degrees.
Coconut Frosting
Combine:
1 c. evaporated milk
1 c. sugar
3 egg yolks
½ c. butter
1 t. vanilla
Instructions:
Cook: and stir over med. heat until thickened, about 12 min.
Add: 1-1/3 c. coconut and 1 c. chopped pecans
Beat: until thick enough to spread.
