Granny Cake Recipes

 

If you love pineapple upside-down cake this Granny Cake is a different take with similar ingredients.  It's looks great too with the brown sugar and pecans on top of the cake. 

It's a very simple cake recipe to make and is a great cake for beginners to try.  Just remember to collect all of your ingredients together before you get started and have the right cake pans on hand.  Having everything you need adds to the enjoyment of cooking and helps the recipe come out as it should.

I am not sure where Granny Cake originated, it was among my grandmother's recipes, so we hope you like it.

Granny Cake

Ingredients:
 
Mix:
2 c. flour
1 c. sugar
1 t baking soda
1 t salt

Add:
2 eggs
20 oz can crushed pineapple with juice
Pour in greased 9" x 13" baking pan.

Sprinkle with:
½ cup brown sugar
½ cup chopped nuts
Bake at 350° for 45 minutes.

About 15 minutes before cake is done, start cooking:

Glaze:
1 cup evaporated milk or cream
¼ cup butter
½ cup sugar
1 t. vanilla
Cook over medium heat and boil 5 minutes. Pour over top of cake immediately after taking out of oven.

Old Fashioned Granny Cake

Ingredients: 
2 c. flour
2 c. crushed pineapple
2 c. sugar
2 tsp. soda
2 eggs
1 c. walnuts

Instructions:
Stir all ingredients together well. Pour into greased 9 x 13 inch pan and bake in 350 degree oven about 35 or 40 minutes. When cool, spread icing over top of cake.

ICING:
6 oz. cream cheese
1/2 c. butter
1 1/2 c. confectioners sugar
1 tbsp. vanilla

Icing instructions:
Whip cream cheese and butter together. Add sugar and vanilla. Beat well.

Pineapple Cake

Ingredients:
20 oz. can of fruit w/ juice
2 c. flour
2 c. sugar
2 eggs
1 tsp soda

Instructions:
Mix all ingredients and beat well.  Pour into 9” x 13” baking pan and bake at 300º for 40 min.

Cream Cheese Icing

1 8 oz. pkg. Cream Cheese
1 stick margarine
2 c. powdered sugar
1 t. vanilla
