Guacamole Salad

 

Guacamole Salad is the perfect side dish with Mexican food.  You want to figure about a medium avocado per person, when making your salad.

Most people really like Guacamole when they eat Mexican food, so unless you are just using it as a dip, you may need less than 1 per person.  I have prepared this recipe to serve 4 people.

Important note about using avocados-

You don't want to prepare your Guacamole until about 15 to 30 minutes before you eat.  The lime juice helps to keep the avocados from turning dark, but if you prepare it too soon, the avocados will turn dark and is not very appetizing.

Ingredients:
4 avocados (just soft to the touch, not hard, not mushy)
1 medium tomato (chopped fine)
1 T. lime juice(lemon works well too)
salt and pepper
1/4 t. garlic powder

Instructions:

Cut avocadoes in half and remove the seed. With a spoon, scoop the avocodo out of the shell. (This is a little easier than peeling it and less wasteful)

Place the avocados in a medium bowl and mash until smooth.
Cut tomato into tiny pieces and add to bowl. Add salt and pepper to taste, and the garlic powder. Add the lime juice and mix well until salad is smooth and creamy.  Taste to see if needs more salt.
