Crock Pot Lentil Soup Recipe
Using the crock pot to make lentil soup is so easy. Just put it all together and then walk away and take care of other things. When using the crock pot however, you want to add some ingredients right at the end of cooking.
For example if you add zucchini, you would add it about 15 minutes before you are ready to serve, or it will become mushy.
Lentil Soup is one of those great soups that can be a new experience every time you cook it. The reason for this is the variety of vegetables that can be added to lentil soup.
For example in addition to the main ingredients, for a vegetarian soup try adding some of these vegetable choices:
zucchini tomatoes corn peas green beans mushrooms red or green bell peppers
Ingredients: 2 cups green lentils 2 cloves finely chopped 2 med. onions finely chopped 1 1/2 T. olive oil 4 to 5 stocks celery chopped 4 to 5 carrots sliced 4 medium potatoes cubed 8 to 10 cups water or chicken stock 1 T. finely chopped parsley 1 t. thyme 1 t. oregano salt and pepper to taste
Instructions: 1. Sauté onions and garlic in olive oil until soft. 2. Add onions and garlic to crock pot with water or chicken stock. 3. Add remaining ingredients and simmer on low for 2 hrs.
