Main Dishes is titled this way as that is the central part of the meal. Usually you select the specific
ingredient you plan to cook for the meal and then build your side dish, salads, soups and desserts around this theme.

We have a nice collection of Our Family Recipes main course meals and will begin adding them in succession. We will start with
some wonderful Chicken dishes and add more later.
When I think about main dish meals, I think of the first ones I learned to cook when I was a teenager in Arizona. We moved to
Arizona when my Dad could no longer find work in the mines of Colorado. So being a teenager in high school, my first Home Economics class was
learning to make Tacos. Then from there it was other wonderful Mexican Food dishes, as this was primarily the type of food served in this locale.
Therefore, I also learned to add a few ingredients of my own here and there.
For example, I have my own version of Homemade Chicken Enchilada Casserole
Recipe that is really excellent. It is not made like traditional enchiladas, but still has all the same savory ingredients.
Then there is my Homemade Beef Enchilada Casserole that has totally different
ingredients from the chicken, but has a "wow, what's that flavor?" taste to keep you coming back for more.
