Moist and Easy Blueberry Muffins
How-To Make Perfect Muffins
The secret to making perfect blueberry muffins or any muffin really, is very simple. This is one of the things I learned in
homemaking class many years ago. Blend your dry ingredients, sifting the baking powder and flour in one bowl.
In a separate larger bowl, mix your wet ingredients together, and then gradually add the flour mixture. Mix just until the batter is
moistened- no big lumps of flour. Also the secret to moist muffins is the melted butter, and what a great flavor.
When you blend in your blueberries or other favorite fruit, gently fold them in to the mixture. What happens when you prepare your
blueberry muffin batter this way? Your muffins will peak beautifully!! No more flat muffins; isn’t that great?
Ingredients:
2 c. flour
1/2 c. sugar
4 t. baking powder
1/2 t. salt
1 c. milk
¼ c. butter (melted)
2 eggs (beaten)
1 c. blueberries
Instructions: Mix dry ingredients together until well blended.
In separate bowl, mix milk, butter and eggs together. Add to flour mixture and stir together only until moistened. Blend in blueberries next,
stirring just until moistened. Grease muffin cups or spray with Pam. Spoon batter into cups filling just about ¾ full.
Bake 15 to 20 minutes until golden brown in 400° oven on middle rack.
