Microwave Peanut Brittle

 

Are you looking for a quick and easy Peanut Brittle recipe to make when the grandkids come over, or when the kids come home from school? 

This microwave peanut brittle is so easy, the kids can really make it themselves, but you should supervise a few times because the candy mixture can get hot. So be sure its age appropriate if you are going to let the kiddos do this themselves.

Ingredients:
1 c. raw peanuts
1 c. sugar
½ c. white corn syrup
1/8 t. salt
1 t. butter
1 t. vanilla
1 tsp. baking soda

Instructions:
In a 1-1/2 qt.  microwave safe pan stir in peanuts, sugar, syrup and salt.
Microwave for 7-8 min. Stir well after 4 min. Stir in butter and vanilla and cook 1-2 min, more.
Add baking soda and gently stir until peanut brittle candy mixture is light and foamy. Pour onto lightly greased cookie sheet and let cool ½ hr.  When candy is cool break into small pieces and store in air-tight container.
