Classic Peanut Butter Cookies

Just about everyone loves peanut butter and what a great way to eat it in these Classic Peanut Butter Cookies.  This makes quite a large batch and they can be made chewy or crunchy by varying the baking time.

The suggested baking time is between 18 and 22 minutes at 350 degrees. Now this may be too hot for some ovens and you may want to use 325.  But if you bake them on the lower rack they will get brown quicker, and you just want to edges to turn a nice brown and them remove them and allow to cool for a few minutes, and you should get a chewy cookie. 

If you want them crunchy then let them cook until the entire cookie has a nice golden brown color and then remove them.  But don't let them stay too long, because they will still firm up in the cooling process. If they get too crunchy they tend to break to pieces when you bit into them.  So experiment with your first batch and then use the same time and temperature for your wonderful Peanut Butter Cookies.

Ingredients:
2 t.vanilla
1 c. peanut butter; creamy
3 eggs
1 c. butter, softened
1 1/4 c. sugar
1 1/4 c. dark brown sugar
1/4 t. salt
1/2 t. baking soda
2 c. flour


Instructions:
Preheat oven to 350 degrees. In a medium bowl, combine flour, soda, and salt. Mix well. Blend sugars, add butter and mix until smooth. Add eggs, peanut butter, and vanilla. Mix at medium speed until light and fluffy. Add the flour mixture and mix just until blended.

Drop by rounded spoonfuls onto an ungreased cookie sheet. Dipping a fork in water to keep it clean, gently press a crisscross pattern on top of the cookies. Bake for 18−22 minutes until cookies are slightly brown along the edges. Remove and place on wire rack until cool.
