Penuche Fudge Recipes

 

If you have ever tasted Penuche you know what a treat this candy is.
There are many variations, but this is my Grandmother's specialty.  It is somewhat like a pecan praline, but has a smoother taste.

Penuche (pronounced pen oh chee) is a brown sugar delight and it is especially good with pecans. Some people make it plain like fudge, and that's good too, but my favorite is with pecans.

Again the same rule applies as stated on the Candy Recipes main page about proper cooking time. In this case it needs to be cooked to the medium ball stage.

This is a fun candy to make as a family too, but beware, the kids are going to get anxious waiting for it to go on to the platter. It's pretty rich too, so enjoy in moderation.

Grandma’s Excellent Penuche

Ingredients:
2 cups brown sugar
3/4 c. light cream
4 T. butter or margarine
2 T. light corn syrup
1 t. vanilla
1 cup chopped walnuts or pecans

Instructions:
Cook together the brown sugar, cream 2 T. butter and corn syrup on medium high heat using a heavy sauce pan as it burns easily.  Heat until it forms a medium hard ball when tested in cold water. (About 8 minutes)

Remove from heat and let stand until partly cooled.  Add the other 2 T. butter and vanilla. Let cool about 10 minutes.  Beat until mixture starts to set.  Add the chopped nuts and turn onto a buttered platter at once.  Cut into pieces after it has cooled.

Penuche Fudge

Ingredients:
1 c. brown sugar
1 c. sugar
1 c. chopped nuts
Pinch salt
½ c. milk or cream
1 t. corn syrup
1 t. vanilla
1 T. butter

Instructions:
Mix sugars, milk, salt and corn syrup.  Stir until dissolved.  Place lid on until it boils.  Cook without stirring until it reaches soft ball stage when tested in cold water.  Let stand until slightly cool.  Add vanilla, butter and nuts. Beat until it starts to set up, then pour onto a buttered dish.  Should set up like fudge.  Cut into pieces when cooled and enjoy!
