How-to make your own pumpkin puree:
If you want to make your own pumpkin puree, you can remove the seeds and skin from the pumpkin and either roast or steam the pumpkin pulp, then blend in a food processor until of creamy consistency. Then follow the instructions below for quick and easy pumpkin bread. You can also prepare the pumpkin puree beforehand and then refrigerate until ready to make the bread.
Ingredients: 2/3 c. shortening or butter 2-2/3 c. sugar 4 eggs, don’t beat 1 small can pumpkin or (1 c. fresh pumpkin meats cooked and pureed) 2/3 c. water 3-1/2 c. flour 2 t. soda ½ t. salt ½ t. baking powder 1 t. cloves
2/3 c. nuts (walnuts work well) (opt.)
Instructions: Cream shortening and sugar until fluffy. Stir in eggs, pumpkin and water, blend in dry ingredients. Stir in nuts. Pour into 3 greased loaf pans and bake about 50 min. at 350°.
How-to Make Roasted Pumpkin Seeds
Here is a wonderful recipe to make Roasted Pumpkin Seeds from all those pumpkins you have left-over this fall.
Ingredients: 2 cups cleaned and drained seeds 2 T. butter or Canola or Olive oil 1 1/2 t. salt
Instructions: Remove seeds from pumpkin and separate the seeds from the stringy pulp. Place cleaned seeds in bowl of water and let soak for 15 minutes. Place seeds on paper towels to dry. In a bowl,toss cleaned seeds with melted butter or oil and salt; spread in a single layer on a cookie sheet. Bake in a 300° oven roasting them for about 45 minutes, or until they are dry,and golden brown, tossing occasionally as needed. Kids love them and they are good for you. You can try adding different seasonings like garlic powder, seasoning salt or cayenne pepper for spicy seeds.
