Simply Chicken Salad
This Chicken Salad is a very simple recipe to make and can be done using left-over chicken to create a second meal. Many people add
other things and you can experiment as well.
For a pretty presentation you can serve over a bed of lettuce and garnish with cherry tomatoes and carrot sticks around the edge of your
plate.
It is also great for sandwiches and if you plan to make strickly for lunchbox sandwiches, you may want to omit the onions.
Ingredients: 2 c. seasoned cooked chicken, cut into bite size pieces (left-over baked chicken works great)
2 or 3 stalks of celery, diced
3 boiled eggs (chopped fine)
1/4 c. pickle relish (your choice of dill or sweet pickles)
1/4 bell pepper finely diced (optional)
1/4 c. green or red onion diced
2 T. mayonnaise (may need more if you like it creamier)
salt and pepper to taste
Instructions: Cut up chicken into bite size pieces into bowl.
Add remaining ingredients one at a time and mix well after each.
When adding mayo, use more or less depending on texture you prefer.
You may want to add some of the pickle juice for flavor. Taste as you go and add more or less of your favorite ingredients. (Some like more
onions, less pickles, etc.)
