Homemade Chicken Noodle Soup Starter

Here is a quick and easy homemade soup starter recipe that I use for Chicken Noodle Soup. Of course it can be used for Beef Noodle Soup, as well, just modify the ingredients.

Just the other day I replaced the noodles with potatoes to make a hearty chunky chicken soup. Delicious!

For a real time saver for busy Moms, cook your homemade soup starter beforehand using a crockpot and then follow the directions for a delicious soup.

The great thing about cooking soup in a crock pot, you can go away and take care of other things and when you return your chicken or beef is ready to add the other ingredients.

 

Soup Starter:

1 whole chicken cut up
1/2 onion (chopped)
2 cups chopped celery
1 clove garlic diced
Salt and pepper or your favorite poultry seasoning.

Place the chicken in a large saucepan cover completely with water. Add vegetables and seasoning.
Cook about 30 minutes over medium heat until chicken is done and set aside to cool. (if in a hurry, place chicken in refrigerator safe dish for 15 minutes or so, in order to be able to handle the chicken. (Meanwhile, strain soup stock and return to pot.)

Prepare:

2 cups celery
1/2 onion (chopped)
3 carrots peeled and diced
1 c. water
1/2 can condensed milk
1 can cream of chicken soup
diced chicken

When chicken can be handled de-bone chicken and dice into bite size pieces.  Add 1 cup of water, soup, milk and vegetables.

Cook another 20 minutes or so until vegetables are tender. Add Homemade Egg Noodles to the soup and cook about 10 minutes. If you are really pressed for time, use your favorite prepared noodles. Add salt and pepper to taste.
