Sweet Potato Pie

A couple of great Sweet Potato Pie recipes here. The first one is a southern specialty with lots of rich ingredients for wonderful flavor.

Some people say it tastes like pumpkin pie, but I believe it has a much richer flavor than pumpkin.  The sweet potato is such versatile tuber, and the flavor is great on its own.  (see note below recipes.)

The second is a No Crust Pie that is a little more carb friendly if you like.

Another delicious way to make this pie is to sprinkle pecan pieces on top before baking for a fabulous Sweet Potato Pecan Pie!

 

Sweet Potato Pie

Ingredients:
1 large can sweet potatoes (yams)
or 4 medium sweet potatoes, peeled, cooked and mashed
1/2 c. sugar
1 can evaporated milk
2 eggs
½ C. flour
1 1/2 t. nutmeg
1/2 t. cinnamon
1 t. vanilla extract
½ c. butter or smart balance
1 9" prepared pie crust

Instructions:
Mix together canned or cooked sweet potatoes in a blender until smooth and creamy(remove any strings and discard). Add remaining ingredients and continue blending until really smooth, adding milk as needed.

Pour into 9" unbaked pie shell. Remember if you want Sweet Potato Pecan Pie, sprinkle pecan pieces on top before baking. Bake at 400º for 50 minutes or until brown on top. (You may see brown flecks on top.)
Insert a fork or wooden pick in middle; it comes out clean when done.
Let your pie cool completely before cutting and then can add cool whip or ice cream on top.

No Crust Sweet Potato Pie

Ingredients:
1 large can sweet potatoes (yams)
or 4 medium sweet potatoes, peeled, cooked and mashed
1 cup sugar
1 egg
½ C. flour
½ t. almond extract
½ c. butter or smart balance

Instructions:
Mix together with a blender until smooth and creamy.
Pour into 9 inch pie pan [no crust). Bake at 450º for 25 minutes or until slightly brown on top.

The Versatile Sweet Potato

Just as a side note, you can take a washed sweet potato and poke a few holes in it, then place in the microwave for 4 minutes on high.  Turn over and microwave again for 3 to 4 minutes and you have a delicious microwave baked sweet potato that goes great with pork chops, ham or even fried chicken.  Add butter and cinnamon for a real treat.
