Wagon Wheel Cookies
Wagon Wheel Cookies is so named because after they are baked they resemble the old time wagon wheels. (you may have to use your imagination somewhat)
Anyway with the chocolate cookie, nuts and powdered sugar on top you will really like these. Be sure to chill the dough as instructed however, to make these turn out right.
Ingredients: 2 c. sugar 2 c. sifted flour 4 eggs well beaten 2 t. baking powder 2 t. vanilla 1 t. salt ½ c. melted shortening ½ c. chopped nuts 4 sq. melted chocolate (Sub.:1 sq. chocolate=3 T. cocoa plus 1 T. butter) Powdered sugar
Instructions: Beat together sugar, eggs, vanilla. Blend in shortening and chocolate. Sift together flour, baking powder and salt. Blend into first mixture. Stir in nuts.
Chill 4 hours or overnight. Shape wagon wheel cookie dough into balls, roll in powdered sugar. Place 2” apart on cookie sheet.
Bake 350° for 10 to 15 minutes. (For a moist, chewy cookie, remove from oven before they look done). Makes 4 dozen.
